Sweet Potato Pie Smoothie

Ingredients

  • 1 cup milk of choice
  • 1/2 cup unsweetened coconut milk (frozen or chilled)
  • 1 frozen banana
  • 1 cup prepared frozen sweet potato (see prep notes)
  • 1 tbsp peanut or almond butter
  • 1 serving vanilla protein powder
  • 1 tsp vanilla extract
  • 1 tsp lemon or orange zest
  • 1 tbsp lemon juice
  • 1 tbsp raw honey

Optional Add-Ins

  • 1 tbsp ground cinnamon, ginger, allspice, or pumpkin spice (for an extra dose of fall flavor)
  • 1/2 cup frozen berries like blueberries, blackberries, or raspberries (for a deep, fruity flavor)
  • 1/3 cup plain Greek yogurt (instead of protein powder)

Instructions

  • Start by pouring the milk and coconut milk into your blender.
  • Next, toss in the add-ins (protein powder, almond butter, zest, lemon juice, extract, and spices).
  • Lastly, add the frozen banana last and berries if you’re using them.
  • Blend until smooth, about 1-2 minutes.
  • Add more liquid and continue blending to achieve your desired consistency. Pour into a glass and enjoy!

Notes

 
To prep the potatoes:
  • Roughly chop into small pieces and either roast, steam, or microwave them until tender, about 15-20 minutes
  • Let them cool slightly and then add them to a portioned silicone freezer container like the Smootheeze half-cup tray. Mash them slightly into each cube so that they freeze together and pop out in one piece.
