Equipment

Ingredients

  • 2 large very ripe fresh bananas
  • 1 cup plain Greek yogurt
  • 2 tbsp natural nut butter of choice (peanut, almond, or cashew)
  • 2 tbsp raw honey or maple syrup
  • 1 cup dark chocolate chips or two 8 ounce bars (melted with 2 tsp of vegetable or coconut oil)

Optional Mix-ins:

  • 1 tsp vanilla or peppermint extract
  • 1 tsp sea salt
  • 1 tbsp unsweetened cocoa powder
  • 2 tbsp berry jam

Toppings

  • 1/4 cup chopped nuts
  • 1/4 cup chopped berries or cherries
  • Toasted coconut flakes
  • Flaky sea salt

Instructions

Mash the Bananas

  • In a medium bowl, mash the fresh, ripe bananas with a fork until smooth.

Whisk the Base

  • Add the Greek yogurt, nut butter, honey, and flavorings. Use a whisk to whip the ingredients vigorously until the mixture is completely incorporated and takes on an airy consistency.
  • Fold in any optional mix-ins like chopped nuts, fruit, or jam

Layer the Bites

  • Melt your dark chocolate with the oil and stir to combine.
  • Spoon 1 tbsp of melted chocolate into the bottom of each compartment of the tray (spread it around to cover the bottom of the cube)
  • Top with a heaping tbsp of the banana nice cream mixture (ensure it’s divided evenly among the tray)
  • Finish with 1 tbsp of the remaining chocolate
  • Add a sprinkle of your chosen toppings to each cube

Freeze

  • Place the trays flat in your freezer for at least 4 hours, or until the chocolate sets and is completely firm to the touch.

Pop and Enjoy

  • When you’re ready for a treat, simply press the bottom of the silicone tray to pop out an individual nice cream bite.
